Bran Muffins

I made some bran muffins today. Now, I’m sure that all of you who memorized my Tobies muffin preference order remember that the low-fat bran muffin was my least favorite, but I actually really like a good bran muffin. (Sort of odd about that memorizing thing, by the way.) The best one I ever had was made by French Meadow, in the MSP airport — it had a core of cream cheese. Much like a chocolate coating, a cream cheese core makes just about anything awesome.

I bought Tosca Reno’s book with vegetarian clean eating recipes last week, and this was the first recipe I wanted to try. The printed recipe is vegan, but I used regular yogurt instead of soy, so my muffins aren’t. I also added half a cup of dried mixed berries. I feel like raisins (or similar) are necessary for bran muffins, because they usually don’t have much sweetness on their own. I tried one of these fairly shortly after taking it out of the oven, but the true test will be how they taste after a day or two. So far, though, so good!
