‘Tis the season. . .

. . . to eat nothing but sugar, right? I hope so. I used half of my roasted squash to make soup the other day, but I used the other half (after cutting off the salted edges) to make bread. With chocolate chips and walnuts. I more or less used this recipe. The people, they liked it.

And then! On Saturday! S and I went to Fast and Furless in St Paul, where they sell VEGAN MARSHMALLOWS! Yay. The company that used to make them (in bags like regular marshmallows) has taken them off the market, supposedly for more R&D (they were vegan; they were marshmallows; what’s to develop?). The new company sells them as a gourmet treat, so they’re kind of expensive. But if you haven’t had a Rice Krispie treat since before the other vegan ‘mallows left store shelves, it’s worth it.

I think the package has fifteen marshmallows inside. If that’s right, I used thirteen (there are two left in the package, at any rate), plus two Tbsp margarine, and three cups (and a bit more) Rice Krispies. The marshmallows do melt eventually, but it takes quite a while, and you want to keep the heat fairly low. The ‘mallow/marg mixture never got as ‘thin’ as I remember real marshmallows getting, and I wasn’t sure they’d mix up with the Krispies, but they did.

    I really enjoy reading your blog. Your food always looks so scrumptious! I’ve yet to try (or find) the vegan marshmallows. I’ve seen them on-line, but the added shipping seems too much. I haven’t had a rice krispie treat in years (or marshmallows for that matter). Looks good!

    Gosh! I was just looking up rice crispy treat recipes today to see if I could mess with the original. Then I come here and you’ve got pictures of them! Joe has been on a kashi 5 grain puff cereal kick lately (he just eats it plain like popcorn) and I thought maybe I could use that instead of rice crispies…maybe add some spices and other goodies to the marshmallow mix.
    You are always somehow one step ahead of me!

    I don’t know if this has anything to do with it but there was a big brouhaha a while back over vegan marshmallows and what was thought to be vegan gelatin that turned out not to be…

    I generalli think of miself as fairli knowledgable about foods, but completeli missed the marshmallow thing. Rats and mice. I love marshmallows. What are thei made out of, cow hooves and bones? Urgh.

    Anne — Yep, there’s gelatin in regular marshmallows. Vegan marshmallows mean I can still enjoy the occasional s’more or Rice Krispie treat, but I think the biggest sacrifice is Lucky Charms and Rice Krispie Treats cereal. (Not that I would ever WANT to eat such sugary cereal. Shifty eyes, cough.)

    Ahh, ’tis the season indeed to indulge in sugary goodness – I bake every other day, all year round, so I don’t need one season to make sweet treats :0) The pumpkin-spice bread looks fabulous!!
    My favorite brand of vegan marshmallows is the Sweet&Sara brand :0)
