I love graham crackers, don't you? And haven't you wondered why only graham crackers taste like graham crackers? It seems so simple -- some graham flour, some honey -- there's nothing exotic in the ingredients list. So I decided to try my hand at coming up with a recipe for Graham (Cracker) Bread (you could have smores sandwiches!). My first try doesn't really taste of graham crackers, but it's still a huge success, if I may say so.

You should give it a try!

Graham Bread

Dry
1 cup Graham Flour
1 cup All-Purpose Flour
2 tsp Baking Powder
1/2 tsp Baking Soda
1 1/2 tsp Cinnamon (ground)
1/2 tsp Ginger (ground)
1 tsp Salt

Other
1/4 cup Vegetable Oil
2 Eggs
2/3 cup Brown Sugar
1 1/2 tsp Vanilla
1/4 cup Honey
3/4 cup Milk

Topping
1 tbsp Brown Sugar
1/2 tsp Cinnamon (ground)

Directions
Preheat the oven to 350F/185C. Grease a loaf pan, bottom and sides.

Mix together the dry ingredients and set aside. In a larger bowl, mix together oil, eggs, sugar, vanilla, and honey. Stir in the dry ingredients in parts, alternating with the milk. Mix until combined; do not over-mix.

Place in the middle of the oven and bake for fifty minutes, or until a toothpick comes out clean. When ten minutes are left (ie, 40 minutes into baking), quickly sprinkle the combined sugar and cinnamon on top and finish baking.

Calorie Info: 1 loaf = 2170 calories, 100g = 274 calories (by my measuring -- not guaranteed accurate!)

It's a nice, simple, whole-grain feeling sweet bread, like banana bread or similar. It would be fantastic with walnuts stirred in. I baked it in a Pyrex loaf pan, as you can see in the photo, and it baked very evenly. The tray in the photograph is Josef Frank for Svenkst Tenn (a continuing favourite of mine!). I bought it and a set of four Josef Frank coasters (just visible under the mug) the day before I left London, thanks to a gift voucher from the wonderful Em. Hooray!

Sorry this is so random but my copy of Crafter's Companion arrived to day and I LOVE it and I just had to say something!Being a Brit I have no idea what a graham cracker is but the recipe certainly looks yummy!
Anyway, love the book, love the blog, keep up the great work. Maybe I'll pull my finger out soon and start a blog myself, I'm an awful lurker. All the best, Laura

what is graham flour? Is it available at my giant local grocery store? Now I crave graham crackers.. yummm, that looks SO good!

Mo -- If you can't find it at your grocery store, they'll definitely have it at your nearest co-op. The bag'll say 'graham flour' -- it's whole wheat, so looks, erm. . . like whole wheat flour!

Anna,

Your graham bread looks yummy - as does your lunch in your more recent post. I say well done in adapting a healthier lifestyle.

Could you do me a big favour and post a pic of the Graham flour - I have not heard of it hear in Australia and a pic may help me work out the best alternative.

Ooh you foody temptress! That bread looks FINE! I may try a wheat free version, though by substituting ground almonds I could make more of a cake, hmmmmm, cake :0)

Have added my temp email as mine is still dodgy. I'm afraid my birthday card for you has been stalled by this weeks traumatic events, but I have not forgotten the date, he he. xxx
